Parippu vada/Fried Lentil Fritters is a popular tea snack in Kerala.This snack can be made even with toor dal.Parippu Vada with a cup of hot tea in the evening makes such a yummy snack.
Ingredients:
Channa Dal - 250 g
Shallots - 10 nos.
Green Chilies - 2-3 nos.
Dry Red Chilies - 2 nos.
Ginger(chopped) - 1 tsp.
Curry leaves - 10 nos.
Salt to taste
Coconut Oil for deep frying
Preparation:
Soak channa dal for 4 hrs.Without adding water grind it into a coarse paste.In the same way,grind the shallots,green chilies,red green chilies,ginger and curry leaves into a coarse mixture.Mix it with the dal mixture and add the required salt into it.Take a small amount of mixture into the palm and flatten it to a round shape.
Heat coconut oil in a kadai/frying pan.When the oil is hot,fry the vada on medium heat until both sides turns golden brown.Drain the excess oil with paper towel.
