Mathanga Olan




Ingredients:
Pumpkin (mathanga) diced - 1 cup (into thin triangular pieces)
Red gram dal - 4 tbsp.
Green chillies slit - 3 or 4
Thick coconut milk - 1 cup
Curry Leaves - 2 sprigs
Salt - to taste
Coconut oil - 2 tbsp.


Preparation:
Soak red gram for 4 hrs. and then pressure cook it in low flame till it is well cooked. Then add diced pumpkin, green chillies, salt and water. Ensure that too much water is not added. Cook till the pumpkin becomes soft and that may take 10-15 minutes. Prepare thick coconut milk by mixing 3 tbsp. of coconut milk powder in 1 cup of water. Add it into the cooked mixture. Switch it off as soon as it starts boiling. Add 2 tbsp. of coconut oil and 2 sprigs of curry leaves into it. This curry goes very well with brown rice.
